Valentine’s Day is known world wide as the when love is exalted. What better way to celebrate amour than with a loved one over a fresh, delicious meal by candlelight, in the comfortable, cozy, romantic setting of an historic Pullman train car? Full of charm and vintage décor, the ambience at SideCar Restaurant, located at 3029 Main Street in Ventura, is definitely a setting to fall in love with. This Valentine’s Day, Chef Tim Kilcoyne, Sidecar Restaurant’s executive chef and owner, is sure to stir his guests culinary passions by offering a tantalizing three course menu made with in-season local ingredients. “I won’t know the menu until I get closer to Valentine’s Day,” said Chef Tim. “I’ll have to see what produce is the freshest and inspires me to create the perfect plate.”

Chocolate, a “love” potion for many, is always a staple on Valentine’s Day. In celebration of the holiday, Chef Tim offers this sumptuous recipe to, Cardamom White Chocolate Panna Cotta with Blood Orange Syrup, made with white chocolate and Cardamom spice. Native to India and Nepal, Cardamom refers to several plants in the ginger family that produce a smokey mint taste.

Cardamom White Chocolate Panna Cotta with Blood Orange Syrup

Servings: 4

Cardamom White Chocolate Panna Cotta with Blood Orange Syrup

Made with white chocolate and Cardamom spice, this dessert is native to India and Nepal. Cardamom refers to several plants in the ginger family that produce a smokey mint taste.


    Panna cotta:
  • 6 oz. white chocolate
  • 8 each cardamom pods
  • 2 tsp. gelatin powder
  • 3/4 c. heavy cream
  • 1/2 c. whole milk
  • Blood orange syrup:
  • 6 each blood oranges, zested and juiced
  • 1 1/2 c. sugar


    Panna cotta:
  1. In a dry pan toast cardamom pods until fragrant. Break open.
  2. Bloom the gelatin in 2 tablespoons of cold water.
  3. Meanwhile, melt white chocolate in a sauce pan stirring constantly. You want the white chocolate to slightly brown for more flavor.
  4. Combine milk, heavy cream and toasted cardamom and bring to a boil. Remove from Heat.
  5. Stir in gelatin mixture to the hot cream mixture until dissolved.
  6. Add the white chocolate and stir until smooth. Pass through a sieve to ensure it is smooth.
  7. Divide evenly into 4 oz. cups.
  8. Refrigerate for at least 3 hours. To plate you can release the molded panna cotta onto a plate or simply serve it in the 4 oz. vessel.
  9. Blood orange syrup:
  10. Combine the ingredients into a sauce pan and simmer until sauce consistency.
  11. Spoon over the panna cotta.
